Zucchini Cheese Casserole
  
2 lb. zucchini, sliced 
1/2 cup boiling water 
2 eggs, beaten 
1 lb. cottage cheese 
1 cup cooked brown rice or Bulgar wheat 
1 onion, chopped 
1/2 cup celery, chopped 
1 Tbsp. grated chives 
1/2 cup Parmesan cheese 
1/2 cup sharp cheese, grated (optional) 
Boil zucchini, celery and onion 5 minutes. Drain. Mix all ingredients but cheese. 
Preheat oven to 350º F. Grease a casserole. 
Alternate layers of zucchini mixture and cheese. Sprinkle cheese on top. Bake 45 minutes.
