Vegetables Mashed Yams w Burbon

Mashed Yams with Bourbon serves 8-10

5 lb yams
1 3/4 teaspn. salt
1/2 teaspn grnd. nutmeg, heaping
1 cup sweet butter softened
1/2 cup bourbon
freshly ground black pepper to taste

Scrub yams, cut each one in half, crosswise if large, put in a large deep pot, cover and boil gently for 30 minutes,
till fork tender. Drain and peel them soom as they are cool enough to handle.

Mash them by hand or with an electric mixer with salt and nutmeg, then gradually beat in butter. Add bourbon in a
stream, along with pepper and salt to taste.

Transfer to a greased 2 qt. casserole dish, cover lightly with foil and heat in a 350 degree oven for 25 minutes.
Stir them up well with a spoon and serve piping hot.

These can be made ahead and frozen in the casserole. Thaw and bake as above.
