3 lb. beef sirloin or lean pork
1 lb. green chiles
2 cloves garlic
1/2 tsp. salt
1 tsp. black pepper
Ground cumin to taste
1 Tblsp. chili powder
1 Tblsp. vegetable oil
3 cups water
Dice meat into 1 x 2-inch chunks. Brown meat in vegetable oil; drain oil and fat off.
Add all other ingredients; simmer as long as possible.
