Colorado Chili

CHILI COLORADO
2 lb. lean beef (cubed)
1/4 c. oil
1 onion, chopped
2 garlic cloves, minced
16 oz. tomato sauce
1 1/2 c. water
3 to 4 T. mild chili powder (or to taste)
2 T. cocoa
1 -- 2 tsp. salt (or to taste)
2 tsp. oregano
1 tsp. cumin
2 T. peanut butter
1 tsp. cinnamon
Brown meat in hot oil. Sauté onion and garlic; add to the meat. Add all remaining ingredients and mix well. Cook over low heat uncovered, 1 hour or until slightly thick. Cover & cook 1 hour longer. Serve with hot flour tortillas.

4 pounds course-ground sirloin or tenderloin 2-10 cloves garlic, minced
olive oil and/or butter 1 T oregano
1-2 small cans tomato paste, with can(s) water 1/2 t basil
or fresh tomatoes, finely chopped: 1 T cumin
or canned tomatoes pressed thru a colander salt and pepper to taste
3-4 medium onions, chopped 3 T (or more) chili powder
Brown the meat in the olive oil and/or butter. Add the remaining ingredients, simmer covered, 3 to 4 hours with the lid on, stirring occasionally.
