Green Chili
2 lbs. diced pork
1-1/2 lbs. green chilies (Anaheim peppers)
8 pieces canned green chilies
4 large jalapeno peppers
3 extra large garlic cloves
3/4 to 1 cup flour
1 to 2 tablespoons olive oil

Roast and peel and remove seeds from chilies and dice. Quarter and remove seeds from jalapenos and finely chop. Peal and finely chop garlic cloves.
Brown salted and seasoned pork in olive oil. Remove pork from pan and sauté chopped garlic in the rendered oil.
Put 3/4 cup of flour in large jar with hot tap water and shake well. Pour flour mixture into pan with garlic and seasonings and add water and boil briefly constantly whisking.
Pour sauce into crock pot delumping through sifter and empty garlic from sifter into crock pot/pan and add chopped jalapenos and chilies and pork. Top off 4qt crock pot near to the top ( about 3/4 inch from top) with water.
Cook in crock pot/pan simmering for approximately four to five hours. This recipe is for fairly hot chili reduce jalapenos if necessary.
