Banana Sour Cream Bars

1/2 cup butter or margarine, softened
1-1/2 cups sugar
2 eggs
1 cup sour cream
1 tsp. vanilla
1 tsp. baking soda
1/4 tsp. salt
2 cups all-purpose flour
2 medium ripe bananas, mashed (about 1 cup)


Cream butter and sugar. Add eggs, sour cream, and vanilla. Sift together baking soda, salt, and flour. Gradually add flour mixture to creamed mixture. Add mashed bananas and mix well. Spread into a greased 15" x 10" x 1" baking pan.

Bake at 350° F. for approximately 20 - 25 minutes or until inserted toothpick comes out clean. Cool. Frost with cream cheese frosting below.


Frosting:
1 (8 oz.) pkg. cream cheese, softened
1/2 cup butter or margarine, softened
2 tsp. vanilla
3-3/4 to 4 cups confectioners’ sugar


Cream butter and cream cheese and vanilla in mixing bowl. Gradually add sugar until it is spreading consistency. Icing will not set up hard, you might need to keep refrigerated. Yield: 3-4 dozen bars.
