Checkered Dreams

crust:
1 tbsp. white sugar
1/2 cup butter
1 cup flour

filling:
1/2 cup butter
2/3 cup of sugar
2 beaten eggs
3/4 cup of flour
1/4 tsp salt


Preheat oven to 350 degrees F.

For crust, put the first 3 ingredients in an 8 x 8 glass pan; mix with a fork, and then finger's until well blended. Press down in pan. Set aside.

For filling, cream sugar and eggs, add the flour and salt and mix. Take half the batter and put in a small bowl, and add a few drops of food coloring of your choice. At Christmas, put a tint of green in one half of batter and a tint of red in the other half. Make sure you stir each colored batter well.

Now for the fun part, you drop checker board style on the unbaked short bread bottom, donít worry about not having enough batter to completely cover the bottom, you can take a knife and giving a few swirl's here and there to blend in. Bake 350 until toothpick comes out clean. When cake has cooled put the almond icing on top.



Almond Icing:
2 tbsp. butter
2 tbsp. warm milk
1 1/2 cup icing sugar
1 tsp. almond flavoring


Mix together and spread on cake.
