Cheesecake Bars

1/3 c. butter, softened
1/3 c. packed brown sugar
1 c. flour
1/2 c. chopped pecans
1/4 c. sugar
8 oz cream cheese, softened
1 egg
2 Tbsp. milk
1 Tbsp. lemon juice
1/2 tsp. vanilla


Cream butter and brown sugar; add flour and nuts; mix.

Make crumb mixture (reserve 1 cup of mixture for topping). Press remainder into bottom of pan and bake for 12 to 15 minutes at 350 degrees.

Blend sugar with cream cheese until smooth. Add egg, milk, lemon juice and vanilla; beat well. Spread over baked crust. Sprinkle with reserved crumb mixture. Bake at 350 for 25 minutes. Cool.

5 Tbsp. butter
1/3 c brown sugar

1 egg
2 Tbsp milk
1 Tbsp lemon juice
1/4 tsp vanilla extract


Cream butter and brown sugar; add flour and nuts and mix. Set aside 1 cup of the mixture for topping; press remainder in bottom of 8 x 8-inch baking pan. Bake at 350 degrees for 12 to 15 minutes.

Blend sugar and cream cheese until smooth; add egg, milk, lemon juice and vanilla. Beat well. Spread over bottom crust; sprinkle with reserved 1 cup topping. Return to oven and bake 25 minutes more. Cool, then chill and cut into triangles.

Makes 20 to 25 bars.

Note: May double recipe and bake in 9 x 13-inch pan.



Quick Cheesecake Bars

2 pkg. crescent rolls
16 oz pkg. cream cheese
3/4 c. sugar
1 egg
1 tsp. vanilla


In a 9 x 13-inch ungreased pan, unroll and press 1 package of rolls on bottom.

Beat remaining ingredients and pour on top of rolls. Top with second package of rolls. Bake at 350 degrees for 30 minutes. Cool and dust with powdered sugar. Cut into bars and serve.

1 box white or yellow cake mix (not butter recipe)
1/2 c margarine
1 egg
8 oz. pkg. cream cheese
1 box powdered sugar
2 eggs


Preheat oven to 325. Mix cake mix, margarine and egg; press into 9 x 13-inch baking dish. Mix together cream cheese, powdered sugar and 2 eggs. Pour over cake mix. Bake for 45 minutes. Cut into bars.

1 box yellow cake mix
1/2 c margarine, melted
3 large eggs
8 oz. cream cheese, softened
1 lb. confectioners sugar
chopped pecans for garnish (optional)


Combine cake mix with melted margarine and 1 egg, blending well. Pat mixture into a greased 9 x 13-inch baking pan.

Combine 2 remaining eggs with cream cheese and sugar, beating 3 minutes. Spread mixture on top of cake mixture. Sprinkle pecans on top.

Bake at 325 degrees for 35 to 45 minutes, or until set. Remove from oven. Cut into bars while slightly warm.

Makes about 40 bars.

1/2 c margarine
1 box yellow cake mix
8 oz pkg. cream cheese, softened
1 box powdered sugar
2 eggs
1/4 c. Crisco oil
1/2 c margarine
4 eggs


Mix the margarine, cake mix, eggs and Crisco oil and spread into a greased 9 x 13-inch pan.

Cream margarine and cream cheese together, then add eggs and powdered sugar. Blend these and spread over cake mixture. Bake for 1 hour at 325 degrees. Cool and cut into bars.

Note: Do not overcook. It will not look done when taken out of the oven but it is best when moist and chewy.
