Colonial Pumpkin Bars

3/4 cup butter
2 cups white sugar
4 eggs, beaten
1 (15 ounce) can pumpkin puree
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup chopped walnuts
1 (3 ounce) package cream cheese, softened
1/3 cup butter, softened
1 teaspoon vanilla extract
3 cups sifted confectioners' sugar


Butter and flour one 10x15 inch baking pan. Preheat oven to 350 degrees F (175 degrees C).

In a mixing bowl, whip together butter and sugar until light and fluffy. Add eggs, pumpkin and mix well.

In a separate bowl, mix together flour, baking powder, baking soda, cinnamon, salt and nutmeg. Add to pumpkin mixture and stir in walnuts. Spread mixture onto baking pan. Bake for 30-35 minutes or until toothpick comes out clean. Let cool and cover with vanilla frosting.

To prepare frosting, combine cream cheese, butter and vanilla until well blended. Gradually add sugar, mixing well after each addition.

Makes 1 10x15 inch pan (25 servings).
