Dried Fruit Bars

1/2 Cup dried cranberries
3/4 Cup dried apricots -- diced
3/4 Cup raisins
2 Cups packed brown sugar
1 1/8 Cups eggbeaters
1/4 Teaspoon salt
1 1/2 Teaspoons vanilla
2 1/4 Cups unbleached or all-purpose flour
Preheat oven to 325° F.
Whisk brown sugar into eggbeaters and let sit while you steam the dried fruit. Whisk warm fruit
into sugar mixture until cooled and add vanilla and salt.
Fold flour in gently but thoroughly and spread on cookie sheet or half sheet pan that has been
sprayed with nonstick spray.
Bake at 325F for 25-30 minutes, until evenly golden on top and
springs back to touch. Let cool completely before you try to cut.
This makes a great accompaniment to fat free vanilla frozen yogurt;
