Ginger Orange Bars

1/2 cup sugar
1/2 cup butter, softened
1/2 cup molasses
1 egg
1 1/2 cups All-Purpose Flour
1/2 cup Whole Wheat Flour
1 teaspoon baking soda
1/2 teaspoon ginger
2/3 cup buttermilk
2 teaspoons grated orange peel

Frosting:
2 cups powdered sugar
1 tablespoon butter, softened
1/2 teaspoon grated orange peel
2-4 tablespoons orange juice


Heat oven to 350º. Spray 13x9 baking pan with cooking spray.

In a large bowl, combine sugar and butter, beat until light and fluffy. Add molasses and eggs and beat well. In a small bowl combine both flours, baking soda, and ginger; blend well. Add to sugar mixture alternately with buttermilk; mix well. Stir in 2 teaspoons of orange peel. Spread in prepared pan.

Bake at 350º for 15-20 minutes or until toothpick inserted comes out clean.

In a small bowl combine all frosting ingredients, adding only enough juice for spreading consistancy; beat until smooth. Spread over cooled bars.

NOTE: 1. You can substitue margarine for butter. 2. If you don't have buttermilk you can use 2 teaspoons of vinegar or lemon juice plus milk to make 2/3 cup.
