Key Lime Bars

3 ounces blanched almonds
1 cup unsalted butter
2 1/4 cups all-purpose flour
1 tbsp confectioners' sugar
5 eggs
2 cups sugar
3/4 cup Key lime juice
1/4 cup confectioners' sugar


Preheat oven to 350 degrees. Grease baking dish.

Chop the almonds in the container of a food processor and add the butter, flour, and confectioners' sugar. Blend to dough consistency. Pat into the baking dish and bake for 15 minutes.

Meanwhile, gently mix the egs, sugar, and Key lime juice together, being careful not to let the mixture foam. Remove the baking dish from the oven and reduce temperature to 325 degrees.

Pour the lime juice mixture over the partially baked crust and return to the oven. Bake about 20 to 30 minutes.

Check that the topping is firm. If it isn't, turn off the oven and leave the pan in the warm oven until the topping firms. Cool. Cut into squares. Sprinkle with confectioners' sugar just before serving.
