Lemon-Orange Squares with Twist

Crust:
1 cup all-purpose flour
3/4 cup unsalted butter, at room temperature
1/4 cup confectioner's sugar
1 tbsp grated lemon zest

Topping:
4 eggs
1/4 cup freshly squeezed lemon juice
1/4 cup freshly squeezed orange juice
3 tbsp plain flour
1/2 tsp baking powder


Preheat oven to 350 °F (175°C).

Mix the crust's ingredients on a slow speed until just combined. Pat dough evenly into an ungreased 8-inch square cake pan. Bake for 15 minutes, until shortbread is firm to the touch but not browned. Remove from oven.

While the crust bakes, prepare the topping. Beat eggs, granulated sugar, and lemon and orange juices on medium speed for about 8 minutes, until mixture is a pale yellow colour. Mix in flour and baking powder, and blend until just combined. Pour topping over hot crust. Return into oven and bake a further 20 to 25 minutes, until filling is firm and does not wiggle.

Let cool completely in pan, then refrigerate for 15 minutes. Cut into even squares with a amall, sharp knife. If filling starts to stick into the blade, wipe it frequently with a wet paper towel. Remove cookies from pan with small spatula. Sprinkle with confectioner's sugar before serving. Store in the fridge.
