Lemon Love Notes
Batter:
1-3/4 C unbleached or all-purpose flour
1/2 tsp salt
1 Cup unsalted butter, softened
1 Cup confectioners' sugar, sifted
1 Large egg
1 Cup flaked sweetened coconut
1 Tbl grated lemon zest
Glaze:
2 Cups sifted confectioners' sugar
1/4 Cup fresh lemon juice
2 Tbl lemon zest
1/3 cup flaked sweetened coconut
Preheat Oven 350 degrees.
Lightly butter 13 x 9 inch pan or line with parchment paper.
Prepare batter:
Sift flour and salt, set aside.
In large bowl, cream butter and icing sugar with an electric mixer until light and fluffy. Beat in egg until blended.
Gradually add flour mixture until blended. Stir in coconut and lemon zest.
Press batter in pan and bake on center rack for 20 - 25 minutes or until edges begin to pull away from sides of pan. Do not overbake.
Cool on wire rack. Glaze bars while still warm.
Prepare glaze:
In a bowl, stir together icing sugar and lemon juice and zest until smooth. Drizzle mixture over warm cookies, spread evenly with a small flexible spatula. Sprinkle with coconut.
Cool before cutting.
