Neapolitan Cookies

2.5 cups flour
1.5 tsp baking powder
1 cup margarine
1 egg
1 tsp vanilla
.5 tsp almond cookies
food coloring
.5 cup chopped walnuts
1 square unsweetened chocolate, melted


Cream margarine, sugar, egg and vanilla. Stir in flour and baking powder. Divide dough into thirds.

Line 9 by 5 by 3" loaf pan with waxed paper.

Add 5 drops red food coloring and almond extract to one third of dough; pat dough into bottom of prepared pan.

Add chopped nuts to next third of dough and pat atop pink dough in pan.

Add chocolate to last part of dough and pat atop dough in pan. Chill thoroughly, then remove from pan and cut in half or thirds lengthwise (depending on how big you want the cookies to be).

Wrap in waxed paper (freeze at this point).

To bake: slice in one eighth-inch slices and bake in preheated 350 oven for 10 to 12 minutes.
