Creme DeMenthe Squares
Bottom Layer:
1/2 c. butter
1/2 c. cocoa
1/2 c. powdered sugar
1 egg, beaten
1 tsp. vanilla
2 c. graham cracker crumbs

In pan, combine butter and cocoa. Heat and stir until well blended.

Remove from heat and add powdered sugar, egg and vanilla. Stir in crumbs.

Mix well and press into bottom of 9x13 ungreased pan. Let cool.

Middle Layer:
1/2 c. butter
1/3 c. green Creme DeMenthe*
3 c. powdered sugar

Melt butter; let cool slightly. In small bowl, combine butter and Creme DeMenthe.

At low speed, beat in powdered sugar until smooth. (If mixture is too thin, add more powdered sugar. Mixture should not be runny.) Spread over first layer.

Top Layer:

1/4 c. butter
1-1/2 c. chocolate chips

Combine in small pan. Heat and stir until melted. Spread over mint layer.

Chill 1 to 2 hours. Cut in small squares. Store in fridge.

*Note: You may substitute milk for the Creme DeMenthe and add mint extract to taste and green food coloring.
