Norwegian Almond Bars

2 cups confectioners' sugar
1 1/2 cups blanched almonds ground
1 egg white and
2 tablespoons water
2 cups sifted flour
2 teaspoons baking powder
1/2 cup sugar
1 cup butter
1 beaten egg


Preheat oven to 350° F.

Combine sugar, almonds, egg white and water to form a stiff paste, adding 1 more tablespoon water if necessary.

Sift together flour, baking powder and sugar into a mixing bowl. Cut in butter until particles are size of small peas. Add beaten egg, toss and stir with fork until moist enough to hold together; form into a ball.

Roll out about 2/3 of dough on a well floured surface to fit into bottom of 12 x 8 x 2 or 13 x 9 x 2 inch pan. Transfer carefully to ungreased pan, pressing together breaks. Spoon sugar almond mixture over dough spreading to cover.

Roll out remaining dough to 1/8 to 1/4 inch thickness. Cut into 3/4 inch strips. Place half of strips diagonally across filling. Then criscross with remaining strips to form lattice pattern. Brush strips with beaten egg yolk.

Bake in preheated moderate oven 350 degrees for 35 to 40 minutes. Cool thoroughly. Cut into bars or squares.

Makes about 4 dozen.
