Orange Diamond Tea Cakes
(Crunchy sugar topping, delicate orange flavor - Norwegian Tea Cake)
1 1/3 cups sifted flour
1/2 teaspoon baking powder
3/4 cup butter
3/4 cup sugar
2 teaspoons grated orange rind
1 tablespoon orange juice
4 unbeaten eggs
Preheat oven to 375° F.
Sift flour and baking powder together. Cream butter - gradually add sugar
creaming well - at least 5 minutes. Blend in orange rind and orange juice. Add unbeaten eggs one at a time beating well after each. Blend in dry ingredients and mix thoroughly.
Spread in 13 x 9 x 2 inch pan, well greased and lightly floured on bottom only.
Combine:
1/4 cup white raisins or currants
1/4 cup sugar cubes, crushed and**
1/4 cup blanched almonds, chopped
Sprinkle above mixture over dough.
Bake in 375 degree oven for 25 to 30 minutes. Cool.
For diamond shapes, cut diagonally across pan at 2 inch intervals. Then repeat cutting in opposite direction.
** May substitute 1/4 cup granulated sugar for crushed cubes.
