Peanut Butter Blondies
1/3 cup chunky peanut butter
1/4 cup unsalted butter at room temperature
3/4 cup firmly packed light brown sugar
3/4 cup sugar
2 large eggs
1 tsp. vanilla
1 1/3 cups flour
1/2 cup unsweetened cocoa
1 tsp. baking powder
1/2 tsp. salt
3/4 cup salted peanuts, chopped
Preheat to 350. Butter and flour a 9 inch square pan.
In a large bowl, combine the peanut butter and butter. Mix until creamy and smooth. Beat in the sugars until smooth. Beat the eggs in one at a time, beating well after each egg. Blend in vanilla.
Combine dry ingredients. Beat into the peanut butter mixture until thoroughly incorporated.
Put mixture into the prepared pan and spread evenly. Sprinkle the chopped nuts over the top and lightly press them in.
Bake about 30 minutes, until firm on top and a cake tester comes out clean. Cool and cut into squares.
