Pecan Cheesecake Bar Cookies from Raskas
3 lbs Raskas brand Cream Cheese
2 c. butter or margarine
2 c. brown sugar
6 c. flour
3 c. pecans, finely chopped
2 1/4 c. sugar
1/2 c. milk
6 eggs
2 Tbsp. lemon juice
1 Tbsp. vanilla extract
Preheat oven to 350 F.
In a small bowl or using a food processor, cream butter and brown sugar together .
Add flour and pecans and blend until mixture looks like coarse crumbs. Reserve 6 cups of crumb mixture.
Press the remaining crumbs into the bottom of an ungreased 18" square pan.
Bake in preheated oven for 12-15 minutes.
In a large bowl, blend Raskas Cream Cheese and sugar together on low speed.
Add remaining ingredients and blend until smooth.
Pour onto baked crust and sprinkle reserved crumbs over top.
Bake for 25 minutes. Remove from the oven and let cool 1 hour . Cut into bars and let cool completely. Yield: 1 sheet pan
