Pumpkin Bars

2 c flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
4 eggs
15 oz canned pumpkin
1 2/3 c sugar
1 c cooking oil
3/4 c chopped pecans, opt.
cream cheese frosting, recipe follows
pecan halves, opt.


Combine first five ingredients, mix and set aside.

Beat together the eggs, pumpkin, sugar and oil. Add dry ingredient mixture and beat until well combined. If pecans are desired, stir in now. Spread batter in an ungreased 15 by 10 by 1 pan. Bake for 25 to 30 minutes at 350. Insert a toothpick in the center to test. Cool on a wire rack.


Cream cheese frosting:
3 oz cream cheese, softened
1/4 c butter or margarine, softened
1 tsp vanilla
2 c sifted powdered sugar


Combine cream cheese, butter and vanilla. Beat until light and fluffy. Add powdered sugar and beat until smooth. Spread on pumpkin bars. Top with pecan halves, if desired. Cut into 24 squares and keep refrigerated.
