1 cup all purpose flour
1/3 cup sifted powdered sugar
1/3 cup butter or margarine
1 cup sugar
1/4 cup all purpose flour
2 slightly beaten eggs
1 teaspoon vanilla
3 cups finely chopped fresh or frozen rhubarb
Preheat oven to 350.
In a mixing bowl, combine 1 cup flour and powdered sugar. Cut in butter or margarine until mixture resembles coarse crumbs. Pat crumb mixture into bottom of an 11 x 7 x 1 1/2 inch or 9 x 9 x 2 inch baking pan. Bake for 12 minutes.
In a mixing bowl, beat together sugar, 1/4 cup flour, eggs and vanilla. Stir in rhubarb. Pour over warm crust in baking pan. Return to oven and bake for 35 minutes more or until done. Let cool in pan on a wire rack. Serve warm or cool. Store in refrigerator.
Makes 16 servings.
