Sour Cream Raisin Bars
from "From Minnesota ... More than a Cookbook"
Crust:
1-3/4 cups all-purpose flour
1-3/4 cups rolled oats
1 cup packed brown sugar
1 cup butter, softened
1 teaspoon baking soda
Filling:
4 egg yolks beaten
1-3/4 cups dairy sour cream
2 cups raisins
1/4 cup half and half
1-1/4 cups sugar
3 Tablespoons cornstarch
1 teasp cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
Heat oven to 350.
Combine crust ingredients; press 2/3 of mixture on bottom of 13 x 9 x 2 inch pan.
Mix filling
ingredients in saucepan and heat over medium heat, stirring constantly, until thick. Pour over crust. Sprinkle with
reserved topping mixture.
Bake 30 minutes or until golden brown. Cool; cut into bars.
Makes 4 dozen
