Sugar-Free Raisin Bars
Yield 16 bars
Exchange: 1 starch, 1/2 fat
1 cup raisins
1/2 cup water
1/4 cup margarine
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 cup all-purpose flour
1 egg, slightly beaten
3/4 cup unsweetened applesauce
1 Tbsp. sugar substitute
1 tsp. baking soda
1/4 tsp. vanilla extract
Preheat oven to 350° F and spray an 8” square baking dish with cooking spray.
In a saucepan over medium heat cook raisins, water, margarine, cinnamon, and nutmeg until margarine is melted; continue cooking for 3 minutes.
Add all remaining ingredients.
Spread into prepared baking dish.
Bake for 25-30 minutes or until lightly browned.
