Toffee Bars

Pastry:
1/2 cup butter or margarine softened
1/2 cup light brown sugar firmly packed
1 egg yolk
1 teaspoon vanilla extract
1/2 cup all purpose flour, sifted
1/2 cup quick rolled oats uncooked

Topping:
3 squares semi-sweet chocolate
1 tablespoon butter or margarine
1/2 cup walnuts or pecans coarsely chopped


Preheat oven to 375 degrees. Grease a 9 x 13 inch baking pan.

In large bowl, cream butter, sugar, vanilla extract and egg yolk until smooth. Add the sifted flour and rolled oats. Stir until well blended. Press dough into prepared pan. Bake 15 minutes or until golden. Remove from oven and cool slightly.

Meanwhile, melt chocolate and butter in double boiler over hot, but not boiling water. Spread chocolate mixture over warm baked pastry. Sprinkle with nuts. Score into bars while still warm. Cool completely before removing from pan.

Makes 48 small bars.
