Cranberry and Almond Bars

5 dl rolled oats
1 1/4 dl dried cranberries, unsweetened
1 1/4 dl toasted, sliced almonds
80 grams butter
1 dl demerara sugar
1/2 dl clear honey
1/2 dl milk chocolate chips
1 1/2 teaspoon essence of bourbon vanilla
1 ml almond flavouring


Preheat oven to 190°C/350°F. Butter a square 9-inch baking pan.

Mix oats, cranberries, and almonds in a bowl.

Mix butter, sugar, and honey in a small saucepan. Heat the saucepan until the butter has melted and the mixture starts to bubble. Pour the warm mixture into the dry mixture. Mix thoroughly.

Pat the mixture evenly into the pan and bake for 20-25 minutes, until golden. Let cool completely, then cut into bars.

Note: a dl is roughly one third of a cup, slightly more, as a cup takes 2,5 decilites.
