Ginger Almond Lemon Bars
1/4c toasted almonds
1/4 c powdered sugar
1 c plus 2 tbs flour
1 stick butter (unsalted) cut up
2 large eggs
3/4 c sugar
1/4 c double acting baking powder
1/4 cup lemon juice
1 tsp ginger ground
Preheat oven to 350F.
Process almonds with 1/4 cup powdered sugar & 1 c flour, add butter and blend till meal pat into 8 inch pan,bake15 min till pale golden let cool completely.
Beat eggs till thick and pale, add sugar and lemon, beat 8 min. Sift in the 2 tbs flour, baking powder, pinch salt, ginger. Combine well and pour over crust bake 20-25 min till pale golden. Sift confectioners sugar over and cool.
