Lemon Bars

1 cup butter or margarine
1/2 cup powdered sugar
2 cups sifted flour
pinch of salt
4 eggs, beaten
2 cups sugar
4 tablespoons flour
1 tea. baking powder
6 tables. lemon juice
grated lemon rind


Combine first 4 ingred. until reasonably smooth and pack into a 9 x 13 inch greased pan. Bake 15 to 20 minutes at 350 degrees--but do not brown.

While crust is baking, prepare topping by combining last 6 ingred. Pour over bottom crust and bake 20 to 25 min. at 350 degrees. Sift powdered sugar over top while still warm; cut into squares. Let cool before removing from pan.

Lemon Bars
from Jackie Olden's Holiday Cookbook

1/3 cup butter
1/3 cup brown sugar, packed
1 cup all purpose flour
1/2 cup chopped nuts, your choice
1/4 cup sugar
1 (8 ounce) pkg. cream cheese
1 egg
2 tablespoons milk
1 tablespoon lemon juice, fresh squeezed
1 teaspoon vanilla


Cream the butter and brown sugar until light and fluffy. Add the flour and nuts and blend until crumbly. Reserve 1 cup for topping. Press remaining mixture into an 8 inch square pan and bake at 350 degrees for 13 minutes.

Mix sugar and cream cheese in food processor or blender until smooth. Add egg, milk, lemon juice and vanilla. Beat until smooth. Spread over baked crust and top with the 1 cup of crumb mixture. Bake at 350 for 25 minutes. Cool and cut into squares. Makes approx. 16 squares.
