Double Chocolate Chunk Biscotti

1/3 cup butter (no sub)
2/3 cup sugar
1/4 cup unsweetened cocoa powder
2 tsp. baking powder
2 eggs
1 3/4 cups flour
4 ounces white baking bar or white chocolate baking squares coarsely chopped
3 oz semi sweet chocolate chopped


Beat butter in a large mixing bowl with an electric mixer on medium speed for 30 seconds. Add sugar, cocoa, and baking powder; beat til combined, scraping sides of bowl. Beat in eggs. Beat in as much flour as you can. Stir in remaining flour with a wooden spoon. Stir in chopped white baking bar and semisweet chocolate. Divide dough in half.

Shape each half of dough into a 9 inch long roll. Place rolls 4 inches apart on a lightly greased cookie sheet; flatten each roll slightly to 2 inch width. Bake 375 for 20-25 minutes or until wooden toothpick inserted near center comes our clean. Cool on sheet 1 hour.

Cut each roll diagonally into 1/2 inch thick slices. Place slices, cut side down, on an ungreased cookie sheet. Bake 325 for 8 minutes. Turn each peace over and bake for 7-9 minutes more or until cookies are dry and crisp. (do not overbake) Transfer to wire racks and cool. Makes 32
