Orange Biscotti with Pistachios

1 cup sugar
4 eggs
2 tablespoons grated orange rind
2 tablespoons vegetable oil
2 teaspoons vanilla extract
3 1/3 cups flour
2 teaspoons baking powder
3/4 cup chopped pistachios
Vegetable cooking spray


Combine sugar and eggs in large bowl. Beat at high speed til thick and light in color, about 5 min. Add orange rind, oil and vanilla. Beat til very well blended.

Combine flour, baking powder and pistachios; gradually add to the egg mixture, beating well. Cover and freeze the dough about 1/2 hr. til firm.

Turn out onto a lightly floured surface; divide into 4 equal parts. Shape each into a 10" long roll. Place cookie rolls about 2" apart on large cookie sheets coated with cooking spray and flatten each to 3/4" thickness.

Bake at 325F for 25 min. til wooden pick inserted in center of rolls comes out clean. Remove from sheets to wire rack. Cool 5 min.

Slice each roll diagonally into 18 half inch thick slices. Places slices, cut sides down, on cookie sheets and bake again at 300F for 15 min. Turn over and bake another 10 min. til dry. Cool on wire racks. Makes 72 biscotti. Good with or without chocolate glaze.
