Brownies: Black Bean Brownies

Black Bean Brownies

4 squares unsweetened chocolate
1 C unsalted butter
2 C sugar
4 eggs
1 C black bean puree
2 T finely ground espresso
1 C chopped walnuts (optional)

Preheat oven to 350. Prepare a 13x9x2 pan.

Melt chocolate and butter in double boiler.

Beat eggs, one at a time, into the sugar. Slowly add chocolate butter mixture and beat until well incorporated. Beat in bean puree and espresso. Fold in the walnuts. Pour batter into pan, smooth top.

Bake for 45 minutes for moist brownies; 50-55 minutes for cakier brownies. Cool completely.
