Chocolate Truffle Brownies

Brownies:
1-1/4 cup semi-sweet chocolate chips
1/2 cup butter
3/4 cup brown sugar
2 eggs
1 teaspoon instant coffee crystals
2 tablespoons water
1/2 teaspoon baking powder
3/4 cup flour


Preheat oven to 350 degrees F.

Melt chocolate chips and butter, cool slightly. In a mixing bowl, beat eggs and sugar together. Mix the coffee and water, add to egg mixture. Add chocolate and mix well.

Stir in flour and baking powder, mix well. Spread into a 9"x9" greased pan, bake for 30-35 minutes at 350 degrees. Cool on rack.


Truffle Filling:
1 cup semi-sweet chocolate chips
1/4 teaspoon instant coffee crystals
8 oz. cream cheese, softened
1/4 cup powdered sugar
1/3 cup seedless red raspberry jam


Melt chocolate with coffee crystals over low heat. In a mixing bowl, beat cream cheese until fluffy; add powdered sugar and jam and beat until fluffy. Fold in the chocolate, mixing until well blended. Spread over the top of the cooled brownies.


Glaze:
1/4 cup semi-sweet chocolate chips
1 teaspoon unsalted butter


Melt the chocolate and butter in a small heavy pan over low heat. Drizzle over truffle mixture.

Chill the brownies at least one hour before cutting into them.
