Ginger Brownies

1/2 cup butter, softened
1 cup packed light brown sugar
1 egg, lightly beaten
1 tablespoon rum
1 teaspoon vanilla
1/2 teaspoon almond extract
1/3 cup cocoa
2/3 cup all-purpose flour
1/2 teaspoon salt
1 1/2 cups chopped pecans
1/2 cup semisweet chocolate chips
1 tablespoon chopped candied ginger


Preheat oven to 325 degrees. Grease and flour a 9-inch square pan.

In a medium bowl, beat together butter, sugar, egg, rum, vanilla, and almond extract until light, about 5 minutes.

Sift together cocoa, flour and salt. Combine with butter mixture, stirring just until mixed. Fold in pecans, chocolate chips, and ginger.

Pour batter into pan and bake 25 to 30 minutes; do not overbake. Cool in pan on a wire rack, then cut into squares.
