3/4 cup cocoa
1/4 cup shortening
5 Tbsp. margarine
1 (3 oz.) pkg. cream cheese
1 1/4 cup sugar
1 Tbsp. flour
1 1/2 tsp. vanilla
1/4 tsp. salt
1/2 tsp. baking powder
1/2 cup unsifted flour
1/2 cup nuts, if desired
Preheat oven to 350 degrees F. Melt shortening and 3 tablespoons margarine over very low heat. Stir in cocoa. Remove from heat and set aside.
To make cheese layer, cream the cream cheese with remaining 2 tablespoons margarine. Gradually add 1/4 cup sugar, creaming until fluffy. Blend in 1 egg, 1 tablespoon flour and 1/2 teaspoon vanilla, set aside.
To make chocolate layer: beat 2 eggs until light colored. Slowly add remaining 1 cup sugar; beat until thickened. Add baking powder, salt and 1/2 cup flour. Blend in chocolate mixture, 1 teaspoon vanilla and nuts if used.
Spread half the chocolate batter in greased 8 or 9-inch square pan. Spoon cheese mixture over and top with remaining chocolate mixture. Zigzag with knife. Bake at 350 degrees for 35 to 40 minutes.

4 sq. (1 oz. each) unsweetened chocolate
1 cup flour
1/2 tsp. salt
1/2 cup coarsely chopped nuts
Preheat oven to 350 degrees F. Beat cream cheese with 1/2 cup sugar, 1 egg and 1 teaspoon vanilla until smooth. Set aside.
Heat butter and chocolate over low heat until melted; cool. Beat together chocolate mixture with remaining 2 cups sugar, 3 eggs and 2 teaspoons vanilla on medium speed about 1 minute. Beat in flour, salt and nuts on low speed until blended (about 30 seconds); then beat 1 minute on medium speed.
Spread all the chocolate batter into a greased 9-inch square baking pan. Make hollows in chocolate and spoon dabs of cream cheese mixture into zig-zag fashion. Smooth out top. Bake at 350 degrees 45 to 55 minutes or until pick comes out dry. Cool. Cut into 2 x 2-inch squares. Makes 16 squares.
Cheese Marbled Brownies
1 cup semi-sweet chocolate pieces
6 Tbsp. margarine
1/3 cup honey or 1/2 cup sugar
2 beaten eggs
1 tsp. vanilla
1/2 cup all purpose flour
1/2 tsp. baking powder
8 oz. cream cheese, softened
1/2 cup sugar
dash of salt
1/2 cup chopped nuts
Preheat oven to 350 degrees F. In saucepan melt chocolate pieces and margarine over low heat. Remove from heat; add honey or sugar, eggs, and vanilla; stir just until blended.
Stir together flour and baking powder. Add to chocolate mixture; stir just until dry ingredients are moistened. Pour half of the batter into greased 9 x 9 x 2-inch baking pan. Bake at 350 degrees for 10 minutes.
Cheese Filling: In mixing bowl cream together cream cheese, sugar; beat in egg and salt. Stir in nuts.
Pour filling over partially baked layer. Carefully spoon remaining half of brownie batter over filling. Swirl slightly with cheese filling, being careful not to touch bottom layer. Bake at 350 degrees about 35 minutes. Cool; cut into bars. Store in refrigerator.
