No Melting, No Creaming Fudge Brownies

1 1/2 cups flour
3/4 cup cocoa - measured then sifted
1/4 teaspoon baking soda
1/8 teaspoon salt
3/4 cup (6 oz.) unsalted butter or butter-flavored shortening - melted and cooled
1 cup white sugar
1 cup brown sugar - packed
3 large eggs - lightly beaten
2 teaspoons vanilla


Preheat oven to 350 F. Lightly grease a 9 by 13 inch pan or a 7 by ll inch brownie pan.

Prepare dry ingredients (flour, salt, soda) by whisking briefly together. Set aside.

In a large bowl or mixer bowl, stir together the melted butter (or shortening) with white and brown sugar until thoroughly blended. Add eggs, blending well. Stir in vanilla and add dry ingredients. Spoon batter into prepared pan. To smooth, use a wet rubber spatula or wet fingers to gently pat into place.

Bake about 22-25 minutes or until just done (top should be just set - too much baking and these will be dry instead of fudgey) Cool well. Frost with Chocolate Cupcake Icing. Mark into squares. Freeze.

To serve, allow to semi-defrost, then separate squares. Arrange on a platter. Alternatively, freeze brownies, then separate and wrap each in a piece of wax paper for individual sale.
