Oh, Oh Oreo Brownies

1/2 cup unsalted butter, softened
1-1/4 cups sugar
3 large eggs
5 ounces unsweetened chocolate, melted
2 teaspoons vanilla
1/2 cup all-purpose flour
12 Oreo sandwich cookies, coarsely chopped


Preheat oven to 325 °F. Line a 9- or 10-inch square pan with aluminum foil, then lightly oil the foil.

Combine butter and sugar. Beat until light and fluffy (about 2 minutes). Add eggs, one at a time, mixing well after each. Blend in chocolate and vanilla, then flour. By hand, fold chopped cookies into batter at low speed. Pour batter into pan, spreading evenly. Bake until a wooden toothpick inserted in the center comes out clean (about 40 to 45 minutes). Cool on rack, then cut into squares.
