Brownies: Sandra's Coconut Brownies

Sandra's Coconut Brownies

1 stick butter, melted
1 1/2 cups sugar
3 tbls. cocoa
3 eggs
1 cup flour
1 cup chopped pecans or walnuts
1/2 tsp. salt
1 tsp. vanilla
1 (14-oz.) can sweetened condensed milk
2 1/4 cups grated coconut
Frosting (recipe follows)


Preheat oven to 350 degrees. Grease a 9x13-inch baking pan and set aside.

Mix melted butter, sugar, cocoa, eggs, flour, nuts, salt and vanilla together. Stir until blended well.
Pour batter into greased 9x13-inch baking pan.

Bake for 20-25 minutes. While brownies are baking, stir condensed milk and coconut together. After 20-25 minutes, remove brownies from oven and spread coconut mixture evenly over brownies. Continue baking for an additional 20 minutes or until set. Remove from oven, cool completely then spread with frosting.


Frosting:
3 tbls. melted butter
3 tbls. cocoa
1 1/2 cups confectioners’ sugar
1 tsp. vanilla
2 tbls. evaporated milk


Mix all ingredients and stir until blended and smooth. Spread over cooled brownies. Cut into small squares and serve.

Makes about 28 squares.
