Brownies: Truffle Brownies

Truffle Brownies

1/4 cup butter, cut into pieces
1 1/2 cup semi-sweet chocolate chips, divided
1/2 cup sugar (for part one)
1/3 cup sugar (for second part)
3 eggs
1 cup flour
3/4 cup heavy cream


Heat oven to 350 degrees.

In med. saucepan, over med-low heat, stir together the 1/4 c. butter, 1/2 c. chocolate chips,. Continue to stir and heat until chocolate is nearly melted. Remove from heat and continue to stir until completely melted. Stir in 1/2 cup of sugar. Working quickly to prevent curdling, whisk in 1 egg. Stir in 1 cup of flour to make a smooth batter. Spread evenly in an ungreased 9x9 pan. Place pan with batter in the refrigerator while continuing next step.

In the same saucepan, place 3/4 cup heavy cream and 1/3 cup sugar. Bring to a boil over med-high heat, stirring constantly. Remove from heat and pour over 1 cup of chocolate chips in a med. sized bowl, stir until melted. Quickly whisk in 2 eggs until smooth. Spread evenly over mixture in pan.

Bake about 35-45 min or until top is just dry. Don't overbake. Cool pan on rack and cut into bars.
