Brownie Variations
2 oz unsweetened chocolate
1/3 C. shortening
1 C. sugar
2 eggs
1/2 tsp. vanilla
3/4 C flour or whole wheat flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 C. semisweet chocolate chips
1/2 C. chopped nuts, optional
Preheat oven to 350 F.
Heat chocolate and shortening in a saucepan over low heat until
melted.
Remove from heat.
Mix in sugar, eggs and vanilla.
Stir in remaining ingredients. Pour into a greased square pan.
Bake until brownies begin to pull away from sides of pan, 30 to 35 min. Cool and cut into squares.
Variations
Peppermint Patty Brownies: Immediately after removing brownies from oven, place several peppermint patties on top of brownies. Place back in oven for 1 to 2 min or until patties are soft enough to spread. Remove from oven and with a spatula, smear patties around brownies to frost. Cool, cut and serve.
Black Forest Brownies: Stir in 1/4 C. maraschino cherries or cherry pie filling into batter.
Coconut Brownies: Stir in 1/2 C. flaked coconut in place of nuts.
Festive Brownies: Stir in 1/3 C. chopped candied fruit.
Mocha Brownies: Stir in 1 1/2 Tbsp. instant coffee into batter.
Orange Brownies: Substitute orange juice for water and stir in 2 tsp. grated orange peel into batter.
Peppermint Brownies: Stir in 1/4 tsp. peppermint extract into batter.
M & M Brownies: Substitute 1/2 C. M &M's - any variety or flavor in place of chocolate chips.
