Chocolate Macadamia Rum Balls

2 c chocolate cookie crumbs
1 c macadamia nuts
1/2 c confectioner's sugar
1/2 tsp instant coffee granules
1/3 c dark rum
3 TBL dark corn syrup
2 oz semisweet chocolate, melted
confectioner's sugar or chopped macadamia nuts

Place cookie crumbs in large mixing bowl. Finely chop the nuts with the confectioner's sugar---do not overprocess or
nuts will be oily. Add to cookie crumbs.

Dissolve the coffee in the rum. Stir into cookie crumbs with corn syrup and melted chocolate. Pinch off pieces of dough and roll into 3/4 inch balls. Roll each in confectioner's sugar or chopped nuts.

Let stand about 15 minutes. Refrigerate 2 days or freeze up to 2 weeks.
