Big Sugar Cookies
Makes about 10 seven-inch cookies

1 cup unsalted butter, at room temp
1 cup granulated sugar
1/2 cup packed brown sugar
2 egg yolks
big pinch nutmeg
1 tsp grated lemon rind
2 1/2 cups all purpose flour
2 tsps baking powder
3/4 tsp salt
2 tsps water (if needed)
coarse or granulated sugar, for coating


Cream butter until soft. Add the sugars and continue to beat until fluffy. Add the egg yolks, stir in the nutmeg and lemon rind.

Sift the flour, baking powder and salt. Stir the flour into the creamed mixture to make a smooth dough. Add the water, if necessary. Wrap in plastic wrap and chill at least one hour.

Preheat oven to 400F. Grease two baking sheets lightly.

Measure 1/3 cup of dough. Roll into a ball and roll in the coarse sugar. Place the4 ball on the baking sheet and flatten slightly with your hand. Flatten further with a glass dipped in sugar, until the dough measure 5 inches in diameter. Space at least 3 inches apart. Bake 7 to 8 minutes until the centers have puffed and fallen and the edges are golden brown.
Cool on sheets at least 5 minutes, until firm, then remove to wire racks to cool completely.
