Almond Macaroons

3 large egg whites
Zest of 1 large lemon
1 cup sugar
1 1/2 cups blanched finely ground almonds

Preheat oven 275F.

Beat egg whites until they form soft peaks. Add lemon zest. Gradually add sugar and beat until whites are very stiff and shiny but not dry (5 minutes). Fold in ground almonds.

Cover 2 baking sheets with foil and spray with cooking spray. Drop by heaping teaspoon and space 1 to 1 1/2 inches apart.

Bake 20 minutes or unti firm and slightly brown. Let cool 5 to 10 minutes before removing from baking sheets to cooling rack.

Makes about 3 dozen
