Blueberry Buttons

Blueberry Buttons (cookies)

2 cups fresh blueberries
2 Tbls. flour
2 1/2 cups flour
1 tsp. baking soda
1 tsp. ground cinnamon
3/4 ts.p salt
1/2 cup butter or margarine, softened
1/2 shortening
3/4 cup sugar
3/4 cup brown sugar packed
2 large eggs
2 tsp. vanilla extract
1/2 cp pecans, chopped

Lemon Frosting:
1 1/2 cups powdered sugar, sifted
3 Tbls. butter or margarine, softened
3 Tbls. lemon juice
Optional: yellow food color


Heat oven 375. Grease baking sheets.

Rinse blueberries and pat dry. Mix in with the 2 Tbls. flour. Mix 2 1/2 cups flour, baking soda, cinnamon, and salt, set aside.

Beat butter, shortening, and sugars. Mix until fluffy. Beat in eggs and vanilla. On low speed gradually beat in flour mixture. By hand gently stir in blueberries and pecans. Drop by rounded teaspoonfuls onto prepared cookie sheets. Bake 10-12 minutes or until lightly browned. Cool on wire racks.

Lemon Frosting: Beat together powdered sugar, butter and lemon juice until smooth. Tint with 1 or 2 drops of food coloring. Lightly frost cookies.

Frozen blueberries can be substituted. Thaw slightly and drain well.
