Butterscotch Wafers
1 1/4 c flour, sifted
1 1/2 tsp baking powder
1/2 tsp salt
1/2 c shortening
2 c packed brown sugar
2 well beaten eggs
1 1/2 c chopped nuts
Preheat oven to 325.
Sift together flour, baking powder and salt.
Add nuts to dry ingredients.
Melt shortening.
When melted, but still on heat source, stir in sugar and mix well.
Remove from heat source and stir in well beaten eggs.
Stir in sifted dry ingredients and nuts.
Drop by 1/2 teaspoonfuls onto greased baking sheets.
Bake for approximately 15 minutes.
Allow to cool slightly, then remove to wire racks.
If cookies harden on sheet, return to oven for just a few minutes.
Makes approximately 9 dozen wafer type cookies, 1 1/2 to 2 inches in diameter.
