Cardamom and Lemon Wafers

50g/2oz butter
65g/2 1/2 oz caster sugar
1 egg beaten
50g/2 oz plain flour (no raising agents)
1 1/4 tsp. ground cardamom
icing/powdered sugar to dredge

Filling:
125g/4oz icing sugar sifted
40g/1 1/2 oz butter
juice and finely grated rind of 1/4 lemon


Preheat oven to 190C/375F/Gas 5. Load several baking sheets with non stick paper.

Put butter and sugar in a bowl beat until light and creamy. Gradually beat in the egg. Fold flour and cardamom into the mixture.

Drop 36 small teaspoons of the mix onto the sheets and spread into 2" rounds. Bake for 5-7 minutes until edges are lightly browned. Leave to stand for 1 minute then put on racks to cool.

Make the filling by putting all the ingredients into a bowl and beat until light and creamy. Sandwich cooled wafers together dredge with the icing sugar and keep in a cool place. Makes 18
