Carob Chocolate Chip
1/4 c mashed banana
1/4 c vegetable oil
1 large egg
1 c unbleached white flour
1 c rolled oats
3/4 c carob chips
Beat together mashed banana and oil until creamy. Beat in the egg. Add the flour, oats, and the carob chips. Mix well.
Drop by teaspoons onto prepared baking sheets. Bake at 350 for 10 minutes or until they just start to turn brown
around the edges. Cool on wire racks. Makes 3 dozen
