Chocolate Chip Cookies with Vanilla Pudding

2 1/4 cups Unsifted Unbleached Flour
1 teaspoon Baking Soda
1 cup Butter Or Margarine, softened
1/4 cup Granulated Sugar
3/4 cup Firmly Packed Light Brown Sugar
1 teaspoon Vanilla
1 pkg. (4 Serving Size) Vanilla Flavor Instant Pudding
2 large Eggs
12 oz. package Chocolate Chips
1 cup Chopped Nuts, Optional
Yield: About 7 dozen


Preheat oven to 375 degrees F.

Mix the flour and baking soda together and set aside. Combine the butter, the sugars, the vanilla, and pudding mix in a large mixing bowl then beat until smooth and creamy. Beat in the eggs. Gradually add the flour mixture, then stir in the chips and nuts. Batter will be stiff.

Drop by rounded measuring teaspoonfuls, about 2 inches apart, onto an ungreased baking sheet. Bake in a preheated 375º oven for 8 to 10 minutes.

NOTE: For double chocolate chip cookies, use a 4 serving size package of Instant Chocolate Pudding Mix.
