1995 Southern Living Annual Recipe Book
Chocolaye-Raisin Oatmeal Cookies
1-1/4 c. butter or margarine, softened
3/4 c. firmly packed brown sugar
1/2 c. sugar
1 large egg
1 tsp. vanilla extract
3 c. quick-cooking oats, uncooked
1-1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 (7 oz.) packages chocolate covered raisins (2 c.)
Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well.
Add egg and vanilla, beating until blended. Combine oats and next 5 ingredients; gradually add to butter mixture,beating at low speed until blended.
Stir in chocolate-covered raisins. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
Bake at 350 degrees for 12 minutes or until browned. Let cookies cool on cookie sheets 10 minutes; remove to wire
racks to cool completely. Yield: 4 dozen
