Double-Banana Double-Chocolate Cookies
Yield 40-50 cookies
1/2 cup unsalted butter, at room temp.
1 cup sugar
1 egg
2 ripe bananas, peeled & mashed
1 1/2 cups all-purpose flour
1 3/4 cups quick-cooking (not instant) rolled oats
1/2 tsp baking soda
1/2 tsp baking powder
3 tbsp Dutch-process cocoa powder (unsweetened)
1/2 cup milk chocolate chips
1/2 cup banana chips, crushed
Preheat oven to 400°F/200°C.
Cream butter and sugar. Add egg, mix well. Add mashed bananas, mix until smooth. Mix together the dry ingredients, minus chips. Add into the mixture, mix until you have a medium soft dough. Add chips and mix well. Drop dough by heaping teaspoonfuls onto pre-sprayed cookie sheets about 2 inches apart.
Bake in the middle of the oven appr. 12 - 15 mins until done. Let cool on cookie sheets a minute, then move onto cookie racks to cool.
Store in an airtight container.
