ENGLISH TEA BISCUITS

Preheat oven to 375*F
Cookie sheets - UNgreased

Ingredients~
1/2 cup butter
1/2 cup sugar
1 teaspoon finely shredded lemon peel
1 egg
1 1/4 cups A/P flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup currants or raisins

Method~
In a large mixer bowl, combine butter and sugar on medium speed until softened (about 30 seconds) Add the sugar and lemon peel, then beat until fluffy. Add the egg and the lemon juice. Beat well. In a medium mixing bowl, stir together the flour, baking powder and salt.

With electric mixer on low speed, gradually add the flour mixture to the butter mixture, beating until well mixed.
With a wooden spoon stir in the dried fruit. Mix well.

Drop the dough by rounded teaspons onto cookie sheets.
Bake in preheated oven for 8 - 10 minutes, or until the edge of the cookies are light brown. With pancake turner, lift cookies onto wire rack to cool. Makes about 30 cookies.
